Who doesn’t love a good French fry? But what exactly makes the perfect French fry, according to science? To me, the perfect French fry is one that comes out of a freezer, but the experts are having their say, too.

Dr. Scott Paulson, french fry-enthusiast and physics and astronomy professor at James Madison University, will be speaking at Science on Tap at Old City’s National Mechanics, on December 8th, explaining the art of perfecting the French fry by using different types of potatoes and oils, cooking heats and methods, and more.

The talk begins at 6 p.m., but doors open at 5 p.m.

PYT, which is the brightest lightbulb for list making moths that there is, makes the infographic for its “Sarancha Burger,” a burger doused in a combo of Sriracha, Ranch and Salsa. For lunch today I had the Canoe burger, which on a value/taste matrix, may be the best burger and fry in town. It’s what I call a hotel burger. It’s an over-sized hockey puck of in-house ground beef, properly cooked to temp, served with all the fixings – charred onion, pickles, tomato, lettuce, and little ramekins of mayo, mustard, and ketchup. It comes with a big pile of completely acceptable fries and gratis bread and butter for $11. That’s at lunch only, mind you. The dinner version is $16 and is made with a mixture of duck and beef.

The Shake Shack at 20th and Sansom may have been Philadelphia’s first but it is the last to offer non-frozen fries. But that’s over today as Center City’s Shake Shack is on the fresh-cut bandwagon.

And in honor of the changeover, Shake Shack Center City is giving away free fries with the purchase of a Brooklyn Brewery ShackMeister Ale.

The offer runs until the keg is kicked.

A kiosk devoted entirely to french fries is now open on the first floor of the Towson Town Center—and it isn’t just ketchup and mustard on top of them.

French Fry Heaven, which started in Florida, has arrived in the Baltimore area, and the franchise owners have plans to open more locations across the state. For now, though, french-fry lovers will have to visit the Towson location to get a taste of French Fry Heaven’s unusual flavors.
