Little Pearl chef B.J. Lieberman has created a gravlax sandwich that’s an homage to the Swan Oyster Depot, the historic seafood counter in San Francisco where the kitchen layers cured salmon on a slice of sourdough. It’s a lovely nod to the city’s famous bread. “It plays to my Jewish sensibilities,” says Lieberman, who will […]

Source: Philadelphia Magazine » Foobooz

Photo via Starr Restaurants

We have no restaurant in Philly that’s like Rose’s Luxury. This three-year-old D.C. restaurant got tagged as the best new restaurant in America by Bon Apetit in 2014. Its chef, Aaron Silverman, does a Southern comfort food menu spiked with global influences (pork sausages with habanero and lychee, crispy squid with Yemeni hot sauce) and it is so good that people wait two, three, sometimes four hours to get a seat in the no-reservations dining room. Like, literally, wait in a line outside the front door in order to get a table.

But you ...

Rose’s Luxury Chef Aaron Silverman Wins a James Beard Award

Aaron Silverman

Damn. Aaron Silverman is on a roll. Add James Beard winner to his already long list of accolades. At last night’s awards ceremony in Chicago, the Rose’s Luxury owner was named Best Chef in the Mid-Atlantic—in his first year as a nominee in the category no less.

Silverman was the only D.C. chef to win in this year’s James Beard awards. (Critics Todd Kliman and Tom Sietsema took home prizes in the journalism categories last week.) At least it’s an improvement from last year when D.C. restaurants got zero love from the awards. This year, Peter Chang was also ...

Pineapple Impress: Chef Aaron Silverman Is Making His Own Rules for Fine Dining

Source: Washington City Paper Young & Hungry

Aaron Silverman

In the leadup to the opening of Pineapple and Pearls, Aaron Silverman taught all of his managers how to use Pinterest. And like a bride-to-be, the Rose’s Luxury chef then created nearly 20 inspiration boards for all elements of the decor—even toilet paper holders and trash cans.

“We would get in like 20 different trash cans, and the upstairs [office] would be filled with trash cans, and we’re playing with them and testing them,” he says.

So you can imagine the thought that went into the design of the actual kitchen.

“This is our baby,” Silverman says ...

10 Great Places to Eat Around Capitol Hill

Bistro Bis

Three decades ago, the French ruled the city’s restaurant scene. Today the Gallic presence is mostly confined to casual restaurants. This veteran from one of Washington’s most respected chefs, Jeff Buben, is among the few remaining bastions of the destinations of yore. It might call itself a bistro, but its intention is to woo you with the kind of elegantly sumptuous cooking that inspired countless cookbook writers to pen love letters to French cuisine. There’s nothing innovative about this approach, but to take first, swooning bite of snails in garlicky butter, or fried sweetbreads so light they might ...
